Codex Alimentarius Commission
FAO headquarters, Rome 10 – 14 November 2025
The 48th session of the Codex Alimentarius Commission (CAC48) will be held at FAO headquarters in Rome, Italy from 10 to 14 November 2025.
The plenary discussions will take place from 10.00 to 13:00 CET and 15:00 to 18:00 CET from Monday 10 November to Wednesday 12 November. Side events will be held on Thursday 13 November. Report adoption will take place on Friday 14 November from 10:00 CET.
Technical Codex committees met throughout 2025 to complete work on a range of texts, which have been proposed for adoption by CAC48.
Texts for adoption include:
Standard for fresh dates
Revision of the Code of practice for the prevention and reduction of aflatoxin contamination in peanuts (CXC 55-2004)
Guidelines for monitoring the purity and stability of reference materials and related stock solutions of pesticides during prolonged storage
Maximum levels for lead in some spice and culinary herbs
MRLs for pesticides in food and feed
Food additives
Real-time summaries of key decisions made by the Codex Alimentarius Commission will be published on the websites of both FAO and WHO as they happen.
On Tuesday 11 November, a side event titled “From Code to Codex – AI’s Role in Shaping the Future of Food Safety” will be hosted by Saudi Arabia.

Established by the Food and Agriculture Organization of the United Nations (FAO) and the World Health Organization (WHO), the Codex Alimentarius Commission first met in 1963. It is the United Nations’ body charged with setting food standards to protect consumer health and facilitate fair practices in international food trade.
Comprising 188 Member Countries and 1 Member Organization (the European Union) and 242 Observer Organizations, the Commission meets annually to adopt food safety and quality standards and related recommendations.
